- Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente.
- While the pasta is cooking, heat a large frying pan over medium heat and add the diced pancetta or guanciale. Cook until crispy.
- In a mixing bowl, whisk together the eggs, grated Parmesan, and Pecorino cheese until smooth.
- Season the egg mixture with freshly ground black pepper.
- Once the pasta is cooked, reserve some of the cooking water, then drain the pasta.
- Immediately add the hot pasta to the frying pan with the pancetta and remove from heat.
- Quickly pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.
- Serve immediately with additional grated cheese and black pepper on top.
