Ingredients
  

Pasta base
  • 400 grams Spaghetti
Sauce ingredients
  • 200 grams Pancetta or Guanciale Diced
  • 3 large Eggs Use room temperature eggs for better mixing
  • 100 grams Parmesan cheese Finely grated
  • 50 grams Pecorino cheese Finely grated
  • 1 teaspoon Black pepper Freshly ground

Method
 

Preparation
  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente.
  2. While the pasta is cooking, heat a large frying pan over medium heat and add the diced pancetta or guanciale. Cook until crispy.
Make the Sauce
  1. In a mixing bowl, whisk together the eggs, grated Parmesan, and Pecorino cheese until smooth.
  2. Season the egg mixture with freshly ground black pepper.
Combine
  1. Once the pasta is cooked, reserve some of the cooking water, then drain the pasta.
  2. Immediately add the hot pasta to the frying pan with the pancetta and remove from heat.
  3. Quickly pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.
Serve
  1. Serve immediately with additional grated cheese and black pepper on top.

Notes

For best results, use the highest quality ingredients you can find. Ensure the eggs are fresh, and adjust the cheese ratios to your liking. You can also add garlic or peas for variation.
